Opened the tin and the cockles were sitting in a clean, natural liquor that smelled exactly like a Galician tide pool. Each one was firm but gave way easily, and the brininess felt genuinely unprocessed, not overly salty. Perfect on a slice of crusty bread with a squeeze of lemon.
These are the most plump, tender cockles I've had from a tin—you can really taste that clean Rías Gallegas brininess. The natural packing lets the shellfish shine without any heavy oil or sauce. I've already ordered another batch for my next seafood craving.
